2 ¾ cups all-purpose flour
1 teaspoon baking soda½ teaspoon baking powder1 cup butter, softened1 cup white sugar
1/2 cup Megan's Magical Mojito Blend (dry mix)1 egg1 teaspoon vanilla extractINSTRUCTIONS:Preheat oven to 375 degrees.
In a small bowl, stir together flour, baking soda, and baking powder. Set aside.In a large bowl, cream together the butter, sugar, and Megan's Magical Mojito Blend, until smooth.
Beat in egg and vanilla.
Gradually blend in the dry ingredients.
Roll rounded teaspoonfuls of dough into balls, and place onto beking paper lined cookie sheets.Bake 8 to 10 minutes or until golden. Let stand on cookie sheet two minutes before removing to cool on wire racks.

Magical Mint Sugar Cookie Icing:
3 cups powdered sugar, sifted (375g)3-4 Tablespoons milk1 tablespoon light corn syrup
1 tablespoon Megan's Magical Mojito simple syrup (recipe top, left)1/2 teaspoon vanilla extract
Combine sugar, 2 Tablespoons of milk, corn syrup, Megan's Magical Mojito simple syrup, and vanilla extract in a medium-sized bowl and stir until combined.
If frosting is too thick at this point, add milk one teaspoon at a time, until the frosting is desired consistency . If you accidentally add too much milk, add powdered sugar until desired consistency is reached. If coloring the frosting, divide into bowls and add color.Transfer frosting to a piping bag with a piping tip (I used Wilton 5), or place in a Ziploc bag and snip a small piece of the corner off. Pipe frosting on cookies.Let cookies rest until icing hardens.
